Garlic and Herb Buttered Salmon

We love seafood and Salmon is a must have meal in the Hardwick casa!


1 pound fresh salmon
1 recipe Garlic and Herb Butter 

For the Garlic and Herb Butter:

1/4 C. butter, softened
3-4 cloves minced garlic
1/4 tsp. parsley
1/4 tsp. oregano
1/4 tsp. basil
salt and pepper to taste


1. Preheat oven to 425 degrees. Spray an oven safe baking dish with cooking spray. 
2. In a small bowl stir together softened butter, minced garlic, parsley, oregano, basil, salt, and pepper. 
3. Place Salmon skin side down in baking dish. Coat the top and sides generously in the Garlic Herb Butter.
4. Bake uncovered for 10-15 minutes, or until the flesh is opaque and flakes easily with a fork.

How was your weekend? Ours was very relaxing, just what we needed!

We met some of GH's co-workers for happy hour on Friday...perfect way to kick off the weekend and end the crazy work week!

The school district that I work in is having to make some major budget cuts for the next school year. Right now they are planning to cut 178 teaching positions. They are first cutting all teachers that are new to the district that have less than 5 years of teaching experience. I have 4 years of experience. I found out this past Wednesday that as of now, I will not have a job next school year. 
I am confident in Him and His plan.

Glenn's parents came in town Saturday afternoon and stayed the night with us. The 4 of us had a good long talk and cleared some things up, and I pray that we will only move forward.

We missed one of the family Christmas' back in January, so David and Jan brought our presents to us! It's always fun to get Christmas presents in March!

We took them to La Fonda for dinner and it did not disappoint as usual!

We came back home and and played 42, and of course, Glenn and I won! ;)
 We went to church Sunday morning. David and Jan got to meet Callen for the first time!

After church, we went out for lunch at another one of our favorite places StoneWerks

Between all of the yummy leftovers and the smoked tenderloin David and Jan brought us, we're set for the week!
One more thing, we had tamales for breakfast both Saturday and Sunday. Do y'all eat tamales for breakfast? If not, you should, they were so good!

books, magazines, my family and friends, church, life

2. What was the last thing you bought yourself?
My new watch!

3. Would you rather watch a movie in a theater or from the comfort of your own home?
Home, because I can pause the movie and go to the bathroom and not have to miss any of the movie! 

4. Household chore you don't mind doing?
I actually like to vacuum.

5. Coffee or tea?
Coffee on a cold morning, and sweet tea on a sunny afternoon!

6. What could you eat everyday and not get sick of? 
Pizza or chips and queso.

7. What is the last book you read?
I've been such a slacker in the book reading department lately... I even have 5 magazines that I haven't had time to catch up on.

8. Do you think you "look" your age?
I think so, even though I still like it whenever I get carded!

This lamp belongs in our home, but with a red shade in a different shape.

Hubs and I love red wine, and we both prefer chilled red wine. This would be nice to have.

don't be a stranger

 Spring Break that is. It came and went so quickly. We welcome it's return any ole time!

We kicked off Spring Break at La Fonda {shocking. I know}. I texted Neely about how nervous I was about our meet-up the next day! We both assured each other that we would have a fabulous time! 

We met for lunch at Adobe Verde in Gruene. 

We spent the rest of the afternoon shopping!

I purchased my first pair of Tory Burch Revas! I have since developed a slight obsession.

I can't wait for the Dallas Blogger Meet-up at the end of April!

While Neely and I shopped, GH played golf with the boys!
 Then, he and I met up with a sweet couple for reverse happy hour at Yard House.
We spent the rest of the week relaxing and just spending time together. 

We did some shopping at La Cantera, followed by day drinking at Yard House.
Their Truffle Fries are out of this world!

We went to Central Market to grab lunch and to do some grocery shopping. We came home with Salmon and whipped up a tasty dinner: Herb Buttered Salmon, Rice Pilaf, and Grilled Sourdough Bread! {recipe coming this week}

 We had some friends from Dallas come in town Thursday evening, they stayed with us until Saturday! 

I learned 2 important lessons while laying out by the pool Friday afternoon: rotate and wear sunscreen. Enough said.

We ended Spring Break with a day trip to Fredericksburg yesterday. Hubs was so sweet to me while we shopped and visited wineries for 3+ hours! Thanks babe! 

We found a new favorite store while there, DOUBLE-R-DRYGOODS. I want one of everything. Is that too much to ask for?

It's back . . .

I'm so excited that Keely brought back Getting to know YOU Sunday!

1. If you won the title of Miss America, what would your platform be? 
Duh Education.

2. Outdoorsy or Indoorsy?
I love going out for a run or a walk with Bella, I love laying out by the pool or ocean, but that's it. I don't like to sweat. My idea of camping is spending the day by the lake with friends, playing games and cooking out, but then spending the night in a luxury cabin/hotel {I need air conditioning and a comfy bed}.

3. Pajamas out in public...classy or tres tacky?
I'm going to go with Keely on this one; tacky unless they look like sweats. I wear yoga pants or juicy sweats out in public with no shame!

4. What's your favorite room in your house?
The kitchen and living room. 

5. Nook, Kindle, or Book?
6. Would you rather wear the same outfit for a week or not brush your teeth for a week?
Wear the same clothes, as long as I can wash them and accessorize them!

7. What's your favorite blog at the moment?
The Pioneer Woman will be a favorite always and forever. 

8. Lately, I've been daydreaming about.......?
Going Skiing again!

Sour Cream Chicken Enchiladas

This recipe is a favorite of mine! I got it from my MIL and I have since adapted it to be more to our liking!


12 corn tortillas; cut up
12 oz. sour cream
1 can cream of chicken soup
1 small can of green chilies
1 can Rotel; drained
1 bunch green onions; chopped
1/2 pound Velveeta; diced
1/2 an onion; chopped
2 cloves garlic; minced
4 boneless, skinless chicken breasts
1-2 T. olive oil
1/2 C sharp cheddar cheese


1. Heat olive oil in a skillet over medium high heat. Add in chopped onion and minced garlic. Saute for 2-3 minutes. Add chicken breasts and cook until chicken is no longer pink {8-10 minutes}. Set aside, let cool, and shred.

2. In a large bowl stir together sour cream, cream of chicken soup, drained Rotel, green onions, green chilies, green onions, and diced Velveeta.  Stir in shredded chicken, onion, and garlic.

3. Layer 1/3 of the corn tortillas in the bottom of a greased baking dish.

4. Top with 1/3 of the chicken and cheese mixture.

5. Repeat layers two more times. Then, top with sharp cheddar cheese.

6. Bake at 350 degrees for 35-40 minutes.

I'm loving that Daylight Savings is next Sunday! "Springing Forward" always messes me up, so I am so happy that it is happening while we're on vacation!

I'm loving that I get to meet Neely on Sunday for some Starbucks, shopping, and lunch!

I'm loving this man! I'm thankful that he gets 5 weeks of vacation a year, so he can take a week off to be with me during my Spring Break!

taking it easy

Happy weekend loves! We're enjoying a very boring low key weekend. 

Our apartment community hosts a breakfast at the club house one Saturday a month. We went for the first time this morning. It wasn't what either one of us expected. I honestly thought it would be more like a "meet and greet" type of thing, but it wasn't at all. Everyone got their breakfast {fruit, pastries, donuts, muffins, breakfast tacos, Chick-fil-A chicken minis, juice, coffee, and milk}. We all just ate and there was no pressure to "get to know" everyone.

I know I've mentioned this before, but I have to tell you again how much I love Ebates

I have been shopping online like it's my job lately.

We watched Up in the Air on Thursday, to say it was no good would be an understatement. I seriously wanted to call Netflix and ask for those 109 minutes back.

We're heading over to our friend's house this afternoon, Kami and I will spend the day playing with our pups, while the boys run some wiring through their attic for their new projector.

Fill in the Blank Friday

1. The phrase or punctuation I overuse most is exclamation points and I probably say doi way too much

2. Today I am thankful for the fact that today is Friday. GH and I both took today off, and it has been so refreshing. Three day weekends should happen at least once a month!

3. My best friend is my husband.  

4. A quirky thing about me is I am terrified of any animal that can fly and I can't sleep alone.

5. This weekend I am going to relax and hang out with friends.

6. Something that worries me is everything. I'm a worrier, it drives GH crazy!

7. On my nightstand you would find a lamp, two Emily Giffin books, and a silver heart tray that holds my bobby pins, chap stick, and usually a pair of earrings.

Homestyle Ground Beef Casserole

I found this recipe in my Southern Living Comfort Food cookbook! We've made it twice now, and we really like it!


1 lb. ground beef
1 (14½-oz) can diced tomatoes with basil, garlic, and oregano, undrained
1 (10-oz) can diced tomatoes and green chilies, undrained
1 (6-oz) can tomato paste
1 tsp. salt
½ tsp. dried Italian seasoning
¼ tsp. pepper
3 c. uncooked medium egg noodles
5 green onions, chopped
1 (8-oz.) container sour cream
1 (3-oz.) package cream cheese, softened
1 c. shredded sharp Cheddar cheese
1 c. shredded Parmesan cheese
1 c. shredded mozzarella cheese

Cook ground round in a large skillet over medium heat 8 minutes, stirring until it crumbles and is no longer pink. Stir in both cans diced tomatoes and next 4 ingredients. Bring to a boil: reduce heat, and simmer, uncovered, 5 minutes. Remove from heat; set aside.

Preheat oven to 350º. Cook egg noodles in boiling salted water according to package directions; drain. Stir together hot cooked noodles, chopped green onions, sour cream, and cream cheese until blended.

Spoon egg noodles into a lightly greased 13- x 9-inch or other similar-size baking dish. 

Top with beef mixture. 

Sprinkle with shredded cheeses in the order listed.

Bake, covered, at 350º for 35 minutes. Uncover and bake 10 more minutes. Let stand 5 minutes before serving.

Yield: 6 servings

Note: Freeze assembled, unbaked casserole up to 1 month. Thaw in refrigerator overnight. Bake as directed.
