30 DBC Day 20: Nicknames

My name is Kerbi. Everyone always assumes that it is either a nickname or that I have misspelled it, and that my real name is Kerri; but it's not.

Kerbs {my college friends, grandmother, aunts, and uncles call me that}

Furby {only one of my cousins is allowed to call me that}

Princess {my daddy used to call me that}

Sissy {what my little brother calls me}

Kerbo {college friends call me that too}

Some friends will also call me: Kerbalicious and Ker-P {because I have to pee a lot}

My wonderful husband loves bacon. He would eat it 3 times a day if I would let him! He just asked me if I could go buy a bacon scented candle for our house. I guess I need to start cooking more bacon for him!

Bruschetta Chicken

Bruschetta Chicken

Ingredients:

    2-3 chicken breasts, cubed 

    1 (15 oz.) can diced tomatoes 

    3 ½ C mozzarella cheese 

    1 (6oz.) box chicken flavored dry bread stuffing 

    1 tsp salt, pepper, garlic powder, and Italian seasoning

Directions:

Preheat oven to 350 degrees F. Spray a 9x13-inch baking dish with cooking spray.

Toss the cubed chicken with the salt, pepper, and garlic, in a large bowl. Place the chicken in a layer into the bottom of the baking dish. Stir together tomatoes, 1 ½ C cheese, and stuffing mix in a large bowl; set aside to soften.

Sprinkle 1 ½ C cheese on top of the chicken, then sprinkle with the Italian seasoning. Spread the softened stuffing mixture on top. Top with remaining ½ C cheese.

Bake uncovered until the chicken cubes have turned white and are no longer pink in the center, about 30 minutes.

I am looking forward to the Texas Rangers in the World Series tonight!

I am looking forward to Thanksgiving break.

I am looking forward to eating my grandmothers stuffing, pumpkin pie, pecan pie, homemade rolls, and her wonderful hugs!

I am looking forward to the weather being anything other than 90 degrees at the end of October.

I am looking forward to spending Christmas in Lake Tahoe.

I am looking forward to the TAKS test to be over with.

I am looking forward to buying a house. {hopefully closer to me work}

I am looking forward to starting new traditions with Glenn!

Poblano Chicken Enchilada Casserole

Ingredients:

1/4 cup and 2 tablespoons butter
6 skinless, boneless chicken breast halves
2 fresh poblano peppers, seeded and sliced into strips
4 fresh jalapeno peppers, diced
2 cloves garlic,minced
1 lime, halved
1/4 tablespoons all-purpose flour
1 pint half-and-half
1 bunch fresh cilantro, chopped
4 ounces sour cream
6 flour tortillas, torn into pieces
4cups shredded mozzarella cheese

Directions: 

1. Melt 2 tablespoons butter in a large skillet over medium heat. Place the chicken breasts in the skillet. Mix in the poblano peppers, jalapeno peppers, and garlic. Squeeze the juice from one lime half over the chicken, and place the lime peel and pulp into the skillet. Cover, and simmer 25 minutes, stirring occasionally, until chicken juices run clear. Remove from heat, cool, and cut chicken into cubes. 

2. Preheat oven to 350 degrees F (175 degrees C).

3. Melt 1/4 cup butter in a medium saucepan over low heat. Gradually stir in the flour and half-and-half. Mix in the cilantro, sour cream, and juice of remaining lime half. Cook and stir 10 min.

4. Line the bottom of a 9x13 inch baking dish with torn tortillas. Arrange 1/2 the chicken and pepper mixture over the tortillas. Top with half the cilantro sauce mixture. Sprinkle with 2 cups of cheese, and cover with remaining tortillas. Layer with remaining chicken and pepper mixture, and pour the remaining cilantro sauce evenly over the casserole. Top with remaining cheese.

5. Bake 30 minutes in the preheated oven, until cheese is melted and lightly browned.

Day 8: A Place You've Traveled To

I wish I could find my pictures from my trip to Istanbul Turkey back in 2004 but I can't find them any where. Instead I will share pictures from our last big trip.

girls weekend re-cap

A few weeks ago I met up with 12 of my wonderful friends from college.

Becca's parents graciously opened up their beautiful lake house to us for the weekend. 

We spent Saturday morning shopping in lovely Jefferson, Texas.

We then went back to the lake house for picnic lunch.

We had to take the boat out for a little stroll.

We went to a lovely little winery in Pittsburg Saturday evening.

The weekend was wonderful and I am so blessed to know these amazing women!

Chicken Taquitos

Ingredients:

6 oz cream cheese

1/2 C Herdez green salsa
1 T fresh lime juice
1/2 t cumin
1 t chili powder

1 t garlic powder
3 T chopped cilantro
2 T sliced green onions
2 C shredded cooked chicken

2 C grated Mexican style cheese

flour tortillas

Directions:

1. Heat oven to 425. Line a baking sheet with foil and coat with cooking spray.

2. Stir together room temperature cream cheese with Herdez green salsa, lime juice, cumin, chili powder, and  garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well. 

I usually use a store bought rotisserie chicken from HEB. It saves me so much time and it tastes really great!

3. Working with a few tortillas at a time, place 2-3 T of the chicken mixture on each tortilla {closer to the bottom third section of the tortilla} Roll them up as tight as you can and place them seam side down on the baking sheet. Bake for 10-12 minutes.

Day 3: Your First Love

My first was my wonderful daddy, who is now in heaven.

He always said the right thing, and never lost his temper. He was the most patient and loving person. 

He taught me 2 of the most important life lessons:

1. What it means to be loved unconditionally

2. How to love others unconditionally

I am so beyond blessed to have him as my earthly father.

He took me on dates once a week from the time I was in elementary school until I went off to college. He would always tell me how special and important I am. He would also tell me what to look for in a husband and to never settle. 

I am beyond blessed to have married the man of my dreams! Glenn is my only  true love. I can honestly say that we are perfect for each other. He totally knows my love language!

Day 2: Meaning behind your blog name

When I first started our blog I new right away what I wanted the name to be. I talked with GH about it and he totally agreed with me.  

I went with the title of the song that I walked down the aisle to.

Hands down, this is my favorite song. Forever. 

Glenn and I fell in love with song, and we feel it describes us perfectly.

Today is day 1 of Katie's 30 day blog challenge!

Day 1: Introduce, recent picture, and 15 interesting facts

I am a twenty something newlywed living in south Texas. I am in my 4th year as a teacher. I love to cook, bake, clean, and organize! I am addicted to diet coke, shopping, and reality TV!

15 interesting facts

1.I truly believe that every soda tastes better in a Styrofoam cup. 

2. I am very stubborn.

3. I am OBSESSED with anything and everything that has to do with fall and winter.

4. I would decorate our house for Christmas all year long if Glenn would let me.

5. I am thankful for days without students.

6. I wish I had a real camera to take pictures with.

7. I have ADHD and I take medicine for it daily.

8. My number one fear in life is spiders. My skin crawls as I type this.

9. I only drink Starbucks during the fall and winter seasons.

10. Our Basset Hound is the most high maintenance dog there is.

11. I am not sure that I want to have kids. I love our life with just the two of us.

12. I am from Austin Texas and I can't stand the Texas Longhorns. Seriously.

13. I love: Texas Tech, OU, Alabama, and Texas A&M. In that order.

14. I didn't join a sorority in college and there is not one thing that I missed out on because of my decision.

15. I love my Blackberry and I am not sure how I was able to live without one for so long.

weekend getaway

This weekend I will be on my very first Girls Weekend Getaway since I have been married. I have already prepared GH's meals for the weekend, he will be playing in a golf tournament on Friday afternoon, and Bella will be staying with him. 
So, hopefully he won't be too bored without his lovely wife!

I am so blessed to have such wonderful college friends! I love it when we can all get together again. I am so excited to see these ladies! 11 of my closest girl friends from college are taking a road trip to a small town NE of Tyler TX.

We will be spending some much needed time relaxing. We are planning on doing some shopping, going to a winery, and doing some major catching up!

I am so excited to see you ladies!

I totally don't need to mention that another reason why I am so excited is because I am taking today off. I need a break from school!
